The Best Beef Barbacoa

✅Ingredients
2 dried guajillo peppers soaked, stemmed, and seeded
2 dried ancho peppers soaked, stemmed, and seeded
1 (3-5 pound) beef chuck roast
1 teaspoon black pepper
3 teaspoons salt divided
4 tablespoons olive oil divided
1 chipotle pepper in adobo sauce (pepper only)
3 garlic cloves minced
1 tablespoon apple cider vinegar
1 tablespoon light brown sugar
1 teaspoon dried oregano
1/2 teaspoon ground cinnamon
1/4 cup water
✅Instructions
1️⃣ Place the dried guajillo peppers and ancho peppers in a bowl or jar. Fill the container with water until the peppers are covered. Soak 1 to 4 hours or until softened.
2️⃣ Preheat the oven to 300 degrees Fahrenheit.
3️⃣ Season the beef with black pepper and 2 teaspoons salt. Heat 2 tablespoons olive oil in a large cast iron pot over high heat. Sear the meat on all sides. Once the meat is seared, remove the pot from the heat and set aside.
4️⃣ Combine the guajillo peppers, ancho peppers, chipotle pepper, garlic, apple cider vinegar, brown sugar, remaining 1 teaspoon salt, oregano, cinnamon, remaining 2 tablespoons olive oil, and water in a blender. Blend until smooth, adding more water if necessary to thin the sauce out enough to blend.
5️⃣ Pour the sauce over the meat in the pot. Cover and place in the oven. Braise for 3 hours or until the meat is tender and easily shreds with a fork.
6️⃣ Use two forks to shred the beef. Serve warm.

    Tried it today but without pearl sugar..instead i rolled my dough on a regular white sugar before putting it in the waffle iron... and boom came out perfectly..i ain't going back to regular waffle from now on..the caramelized sugar crunchiness hit me so hard..

      Hard squashes often still have visible dirt on them from the ground they were grown on as they have to remain dry after they are cut from the vine which means they are vulnerable to mold. They have an elevated risk of food borne illness like listeria and E. Coli that transfers to your knife and cutting board.

    Can’t speak on the others, but with regards to the vanilla, you need to go by weight because each bean will be a different size. Also 6 weeks is not enough time. You’ll need at least 12 Months otherwise all you’ll get is a strong alcohol taste and smell.

    Ok I tried this twice and both times it tasted REALLY vinegary. Do you not add any water? Also, there is a good bit of sweetness too! Is this recipe for sweet pickles? I’ve found that only heathens and serial killers eat sweet pickles.

    The cake looks lovely and moist … but eight cups of icing sugar in the frosting? Way too much, in my humble opinion!

      It’s a lot of frosting! Buttercreams have a very high sugar content and this one is pretty standard. For an alternative, I highly recommend a whipped chocolate ganache.

    awesome advice!!!! great vid...can you mix 80% lean with 90% lean? adding olive oil is key and its adds a most health vegetable oil rather than saturated animal fat...a half teaspoon of baking soda mixed into the raw ground is a chinese secret to further tenderize the meat...

    Bad technique, and that's nothing like an actual shepherd's pie. 1/4 tsp of thyme for that large volume of meat and vegetables and stock is ridiculous, too.

      Feel free to make your own recipe! This one has had thousands of rave reviews over the years and is published in a best selling cookbook. To each his own! In the future, it’s helpful to provide actual criticism rather than just random complaints. That’s called trolling and it just makes you look dumb.

      @@Thestayathomechef I'm Irish, so I know what the recipe should be like and it's methods. The problem with many UA-cam cooking accounts is that they assert to know how to make good, tasty dishes. You didn't even caramelize the mince or work it properly, you just allowed the juices to dilute the sauce in the end. Perhaps people in the US might be fooled by this recipe, I can tell you that there is very little skill applied (and the lack of caramelization is only just one example) and a minimization of flavour. The title of the video is, "Old Fashioned Shepherd's Pie". I'm telling you that it isn't. I'll ignore the Ad hominem, too.

      And just an educational note for anyone reading this, one cannot caramelize meat as there is no sugar in it so I’m not entirely sure what this person is referring to. Perhaps browning, but that doesn’t make sense either as if you have no juices left when browning ground beef or lamb, then you have overcooked it and dried it out.

      This video is for how to cook crab legs so you are welcome to subsequently serve it with whatever additions your heart desire. You can’t season it inside the shell after all ;) I’m curious how you’d serve it. In New England it’s clarified butter and Old Bay. That’s it. Crab is obviously served many other ways, but in the culinary world it’s always about keeping any seasonings very subtle since crab meat is so delicate and can so easily be overpowered. Straight crab is delicious all on its own.

    This is my go to chocolate cake recipe. I usually scale it down by 1/3rd so I use 1cup of flour and so on. It is so easy to make since you just need to mix all the ingredients in one pot and then bake. It comes together pretty quickly and results in a very decadent and soft chocolate cake. WOULD RECOMMEND!
